A tasty and aromatic preparation has long been used not only as a medicine for colds. Forest raspberry jam is used both as a separate dessert and as a filling for pies, pancakes and other sweet dishes.

Over the years, many ways have been invented for preparing delicacies. But the basis of the dish is invariably made up of two ingredients - raspberries and sugar.

Classic forest raspberry jam

In the classic recipe for harvesting raspberries, there are only two components - berries and sugar, which are taken in equal parts. A similar amount of granulated sugar is taken per kilogram of raw materials.

Important! Forest raspberries are very tender; after harvesting they quickly lose their beneficial properties and give juice. Therefore, it is better to harvest the berry immediately after it gets on the table from the forest.

Procurement process:

  1. Raspberries are thoroughly washed, cleaned of debris.
  2. Pour raw materials into a saucepan, add half of the required amount of sugar on top. Leave the mixture for several hours. This time is necessary for the berry in order to give a fragrant juice.
  3. The saucepan is put on low heat. After the jam boils, it is removed from the stove and left to infuse overnight.
  4. The next day, the container with raspberries is again placed on the fire, brought to a boil, and removed.
  5. At this point, add the remaining amount of granulated sugar, mix thoroughly so that the sugar crystals are completely dissolved.
  6. The jam is poured into sterilized jars.

This method of harvesting forest raspberries allows you to preserve the beneficial properties of berries. They are not subject to prolonged heat treatment. Boiling for a few minutes is necessary to completely dissolve the sugar and keep the dessert better in winter.

Raw forest raspberry jam for the winter

To make raw forest raspberry jam, you need the berry itself and granulated sugar. Per kilogram of raw materials, they take from 1.2 to 1.7 kg of sugar, depending on how sweet the berries are, dense, filled with juice.

Step by step guide:

  1. Rinse the forest raspberries. Water will cleanse it of dust and dirt, insects, litter. For this, it is convenient to use a colander and a container of water. It is not recommended to wash the berries under running water, they are easily destroyed. Leave the peeled raspberries in a colander for a few minutes to drain.
  2. Grate the berries. To do this, you can use a blender or pour the raspberries into a saucepan and chop them in a press puree. The first method is convenient for the procurement of a large amount of raw materials. The second will appeal to those who like it when whole berries come across in the dessert.
  3. Chopped forest raspberries are covered with sugar, mixed, left for 4 hours. During this time, the granulated sugar should completely dissolve. It is not recommended to keep the mixture longer, it may start to deteriorate.
  4. Then the berries are mixed again. The jam is laid out in pre-sterilized small jars, covered with lids.

Calorie content

100 grams of fresh raspberries contain only 46 calories. After it turns into jam, the calorie content increases sharply due to the sugar content - up to 270 kilocalories. To make the dessert only beneficial, it should be consumed in limited quantities.

Advice! There is a way to reduce the calorie content of forest raspberry jam to 150 calories. To do this, you can add not granulated sugar to the dessert, but fructose.

Terms and conditions of storage

The best place for storing jam is the bottom shelf of the refrigerator. If there is no way to put dessert in the refrigerator, when choosing a place, it is worth considering that:

  • banks should not be placed near heat sources;
  • the room must be dry, otherwise mold will appear in the jam;
  • workpieces should be protected from sudden temperature changes;
  • A ventilated kitchen cabinet or pantry can be a suitable storage location.
